Meatless Monday

Portobello Mushroom Fajitas 

1 Large Onion
1 Medium Red Onion
2 Large Portobello Mushrooms
2 Large Bell Peppers
3 Large Tomatoes

  • Slice all veggies into long and strips 
  • Coat skillet lightly with Olive Oil
  • Let pan heat on medium high heat
  • Toss in veggies and sprinkle with taco seasoning(to taste) 
  • Serve with your favorite toppings, in tacos, on chips, or as tostados 




One corn tostado, 1/2 cup veggie refried beans, 1 tbls sharp cheddar, 1 tsp sour cream, salsa, guacamole. 6 Weight Watchers Plus Points.
